My name is Massimo Bruno and I’m a trained personal chef from ths following international teachers: My Mamma, Zia Rosa, Zia Anna, Zia Lina, My Nonna, Zia Domenica, Nonna Stella and many more Ladies from my province Puglia which I wan’t mention the name for celebrity reason.
As you can understand I didn’t learn about food from a real teacher or celebrity chef, but from the mathriarcals symbol of my family, which in an Italian family tradition are been always considered the best cook.
I decide to learn their food because nowday we always look for something more fancy and new and at the same time we forget the good traditional old style, which is on my opinion, one of the best. I started learning food initially from my mom using all the subconscious memory of my taste buts....it worked! Today my biggest desire is to share what I learned and what still I'm learning with other people, so they can understand the biggest difference between italian restaurant food and homemade food, not just with the food, but creating a casual feeling around the table with family style dinner and enjoy joysly the meal whithout ball sheet...hoops. Why Homecooking is my favourite? Because is mostly made from a few healthy ingredients and time and technique are really important plus the main ingredients called "Love". After both war in Italy there was a lot of poverty in Italy, so Nonna had to use the only product available in their area to cook still food with beatiful flavour, so they started to be creative and they create the italian famous kind of cuisine called Cucina Povera (pour cuisine), made from pour natural ingredients and giving big importance to the big caratheristic and intensity of the olive oil, the yellow gold of Italy. One of my favourite Nonnna's say is: "Dal niente si fa tutto" (from nothing you'll do everything) which describe in a few word the concept of this great era.
